Garlic Butter Lobster Tails Jamaican Style
Jamaica’s spiny lobsters are perfect for creating a flavorful and tender lobster tail dish. This garlic butter lobster recipe brings the Caribbean heat with a blend of seasoning that’ll have you coming back for more!
Ingredients

5 spiny lobster tails

1 clove garlic, minced

4 slices of hot pepper, minced

1 stalk scallion, minced

1/2 medium onion, minced

Pinch of salt
-
2 tablespoons all-purpose seasoning (Maggie preferred)

1 tablespoon Old Bay seasoning

1 tsp black pepper

1 tsp vegetable oil
-
2 tablespoons Chiffon margarine (or butter)

Fried bammy (for serving)
Instructions
Prepare the Lobster Tails

Wash the lobster tails under tap water.

Trim the ribbons and fins on the lobster tails.

Using kitchen shears, cut the top shell of each lobster tail down the center, stopping just before the tail fin.

Remove the “do-do” string and rinse the lobster tails again. Set aside.
Season the Lobster Tails

In a container, combine a pinch of salt, 2 tablespoons of all-purpose seasoning (Maggie), 1 tablespoon of Old Bay seasoning, and 1 teaspoon of black pepper.

Season each lobster tail with this mix, ensuring an even coating. Set aside
Prepare the Garlic Butter Mixture

In a pot, heat 1 teaspoon of vegetable oil and 2 tablespoons of Chiffon margarine (or butter) over medium heat.

Add the minced garlic, hot pepper, scallion, and onion. Stir and sauté for about 1 minute, until fragrant.

Turn off the stove and set the sautéed seasoning mixture aside.
Baking the Lobster Tails

Use a teaspoon to stuff each lobster tail with the sautéed seasoning mixture.

Brush the lobster tails with the remaining margarine and oil mixture.

Bake the lobster tails in a preheated oven at 375°F (190°C) for 12-15 minutes, or until the lobster is fully cooked and tender.
Serve
